5 HEALTHY GRAB & GO BREAKFASTS IDEAS
Most days of the week I start work bright and early at 6:00am and do not return home until after 8:00pm. It is important that I plan my meals ahead of time so I don’t find myself sitting in the chik-fil-a drive through. Here are some of my favorite grab & go meals along with an amazing pre-cooked breakfast recipe that can be used throughout an entire week.
Grab & Go Breakfasts!
- Deli Meat, Berries and 1 handful of almonds.
- Hard Boiled Eggs with almond butter and spinach salad.
- Smoothies are PERFECT for someone on the go with little prep time in the mornings.
- Add spinach, coconut milk, frozen fruit of choice (berried preferably), and protein powder!
- Cook up some eggs and spinach covered in melted coconut oil. I promise it will take no longer than 5 minutes!
- Be sure to have hard-boiled eggs, deli meat, fresh berries, nuts & seeds, avocados, beef jerky and a few pre-cooked meals for easy on-the-go snacks. Preparation is the key to success!
Pre-Cooked Breakfast Frittata (My Ultimate Favorite)
Ingredients
- 6 eggs
- 1/4 Chopped Onions
- 1/4 Chopped Red and Green Bell Peppers
- 1 Cup Raw Spinach
- Gluten Free, Nitrate Free Jimmy Dean breakfast sausage
- 1/2 Cup Mushrooms
- 2 Teaspoons Olive or Coconut Oil
Instructions
- Start things off by pre heating your oven to 375 degrees.
- Next, you’ll want to get your sausage cooking. During this time you can chop and prep your vegetables adding the onions, bell peppers, and mushrooms to a separate pan first then after 2-3 minutes add the spinach and cook until wilted.
- Beat your eggs in a large bowl and add your freshly cooked ingredients. Stir well and pour into a 6x6 or small square pan (use a larger pan if you are doubling the recipe for more delicious goodness). Be sure to coat your pan well so the delicious goodness doesn’t stick!
- Place in the oven for 25-30 minutes or until the eggs are no longer runny. Remember, the middle will take abit longer to cook so patience is key!
- Let sit for 10+ minutes before cutting your frittata into small portions to consume throughout the week. Most importantly, Enjoy!
